What is a Spirit?

That is why life is so tasty!! This is our last menu for this year, we think to keep doing it!

Pasta Soul> Earthy butternut squash dehydrated linguini with marinated collard green angel hair, scrumptious fresh tomatoes and yay! Kiki marinara… A combination of yellow, orange, red veggies, spices and gently smoothed with pure oils (lasts 4 days).










Ahhhh Quiche> Sweet carrot bread, parsnip filling, marinated Portobellos and red loving tomatoes. As a suggestion, eat this with fresh cucumbers and tender greens… To add more freshness and crunchiness to this tastiness (lasts 5 days).











Nori Wraps> So simple and so tasty! Crunchy veggies, meaty mushrooms and a fusion of Japanese and Thai sauce, guarantied to make you smile with the first bite (lasts 2 days).












Spinach Soup> Juicy, green and crunchy mix with flavorful herbs and plenty of love (lasts 4 days).














Coco Pudding> With fresh young coconut, fresh persimmons and raw cacao fudge (lasts 5 days).

Bravisimo> I LIKE IT! Yes I can't live without pasta and this one is pretty addictive. Marinated daikon and zucchini noodles with marinated cremini mushrooms, tomatoes and herbs (lasts 4 days)











PearYum> Totally in love with this dish! This crunchy & juicy appetizer is made of ripe pears and a combination of beets and raw mole sauce. Garnished with nut-chili sauce it's just wohoo mama yehaa! (lasts 5 days)










Hot Dog Mode> We love creating new dishes; we love the variety this world has to offer and we love to contribute to the making of new flavors and perspectives. This is a nut base dehydrated hot dog on a zucchini tortilla and fresh and crunchy romaine lettuce from our favorite local farmer and some fresh marinara sauce, veggies and mustard chili sauce (lasts 4 days)






Snow Chicks> Que bonitooooo! May be too cute to be eaten... But damm taste good!














Butternut Squash Soup> Fresh, sweet, comfy and as always... tasty! (lasts 4 days)

Fresh Monday Menu

It always feels awesomely fresh after the rain....

Bello Portobello> I heard somewhere that mushrooms come from outer space… That may sound crazy but mushrooms really taste like nothing in this world… This is a flax-Italian herb cracker with Indian curry sauce, fresh baby spinach, marinated Portobello and marinated broccoli with cherry tomatoes and avocado on the side (lasts 3 days)






Zucchini Wrap> A flavorful and soft zucchini tortilla filled with marinated collard greens, apple-zucchini spread, fresh tomatoes and avocados (lasts 3 days)












Olive Yumminess> From a beautiful Peruvian olive farm, this is an onion cracker filled with Peruvian olives and accompanied with sunflower sprouts and Moroccan spread (lasts 4 days)




















Mi Gazpacho Favorite > Fresh carrot juice, watermelon, honey dew, chilies and herbs mixed together to refresh and energize our thriving souls (lasts 5 days)











Arroz con Leche> Inspired by a typical Limenian (from Lima-Peru) dessert, "rice" with coconut cream, raisins, pineapple, mango and cinnamon…. just delicious (lasts 6 days)

Eucalyptus Dancing in the Rain...

After many falling branches and trees, the smell of the air after the storm in San Diego resembles sitting in a sauna and filling lungs with the freshness of the Californian wood land…

Mango Tapa> Certainly not like the typical Spanish dish… We are proud to be original… The crust is made of flax seeds and Italian herbs… May be pretty soft because it has a layer of kale-spinach-garlic spread condensed with some almonds on top of it… Garnished with gently marinated broccoli and spicy mango, with extra date-chili sauce on top of everything (meant to last 4 days)








Cauliflower Quiche> As you've noticed… The pictures this time were taken in our studio, not outside as we usually do… May look less cozy but the veggie colors of life brighten up… This quiche has a carrot-flax crust with sweet and sour cauliflower-almond filling, spinach-chili sauce and garnished with tomatoes, dates and hemp seeds and zucchini-beet-sesame seed salad on the side (lasts 3 days)








Nori Rolls> Asian and Mexican flavors combine in this dish... Mexican spread with cucumber, celery, carrots and carrot-tomato sauce for filling and Asian ginger-garlic sauce for dipping (lasts 2 days)













Butternut Squash Soup > Soft and tender veggie and herb blend for a wild rainy day, garnished with tomatoes and cilantro (lasts 4 days)










Banana Sandwich> Eat it with patience, hold it softly and bite from wherever you want, this is a banana leather filled with mango cream, fresh bananas and garnished with chili-date sauce, raw cacao nibs and pecan crumbles (lasts 5 days)










Viva la Veggie Salad> Fresh combination of wild greens, green and purple cabbage, cilantro, alfalfa sprouts, marinated beets, walnuts, figs, raisins and tomato-ginger dressing (lasts 3 days)

Portobello Pizza> A thick and soft cauliflower-seed crust, marinara sauce, marinated tomatoes and Portobello mushrooms with zucchini-sesame salad on the side (lasts 4 days)











Nice and Rice> Jicama-arugula rice with (what we call) “nices” which is a combination of dehydrated thin spicy veggie-flax bread filled with sweet almond-carrot spread, with turmeric sauce and marinara spread on the side (lasts 4 days)










Pizza Quiche> …and where is the pizza? It's more like a pizza tower of zucchini slices that fill the quiche; topped with marinated tomato, parsnip cheese, raw nut sauce and mushroom sauce (lasts 4 days)










Cilantro Soup> It has been a while that we didn’t make this one, this time it was made with more veggies besides cilantro and garnished with fresh tomatoes, onions and nut-meat crumbles (lasts 5 days)










Hipo-Mouth> Open wide and take a bite, this composition is happiness made food… a delicate apple-flax crust filled with agavelized raspberries, grapes and garnished with blackberries, kiwi and mini apples (lasts 5 days)










Veggie Mix Salad> with pecans, raisins, hemp seeds and Asian mushroom dressing (lasts 3 days)

Thanks… For such a giving Earth…

The Turkey> was happy for not being present on this menu... A combination of roots and herbs to give form to this tender and flavorful patty; we also did a gravy out of nuts, dried fruits and spices... Served with a cabbage-tomato salad on the side. (lasts 3 days)










Veggie Vibes Tamales> since all our recipes are original, we could name all our creations by our company name… But some dishes spark on top of the others… Like these tamales… Made out of fresh parsnip with a walnut-sundried tomato filling and a bunch of herbs and spices to give birth to a tempting masterpiece…

I grew up eating traditional tamales and I love them… These ones are really different… But they give me the same feeling of goodness… (last 5 days)







This is not stuffing> All our menus are special, and this time it was inspired by some of the traditional Thanksgiving dishes for the coming occasion. I was thinking of stuffing when preparing this dish; but now after it's done... I think I overdid that thought… Good then! Tastes nothing like stuffing… Tastes amazingly better! This is a fascinating mushroom patty with fresh cucumbers, cheese-sauce, vegan raw cottage cheese and tomatoes (lasts 3 days)








I Love Persimmons> I do really love them! That juicy sweet goodness makes me dream of the winter season sometimes even in the middle of summer. Guys let me introduce to you a variation of that goodness>>> with a tasty and tender lemon-walnut-date crust to begin, pear-persimmon ice cream to fill your mouth with such a pleasure that God up there will be jealous of your ecstasy... Garnished with caramelized persimmons and mint leaves... (lasts 6 days)








Cold Play > ”If it's not tasty it's not healthy!” (that is one of our phrases). In Veggie Vibes we believe in flavor! Texture, aroma and freshness.... And we test our commitment to flavor every day, even though all the dishes that we present in this blog are raw, we sample our dishes with a bunch of dudes with a variety of food preferences that you wouldn't even imagine, because it's fun! This cold soup made with almond milk, fresh veggies and mixed herbs will add some freshness to your Thanksgiving table... (lasts 3 days)
